These six 6-ounce steaks are well suited to a variety of different seasonings and can be cooked in a variety of ways.

To broil or grill cook for approximately 5 to 7 minutes per side. Thicker portions may take slightly longer; however you will know when the steaks are done because they will appear opaque throughout. You may wish to baste with an equal-parts combination of butter and lemon juice. These steaks can also be microwaved two at a time in a baking dish. Brush with butter and lemon juice cover with plastic wrap and vent one corner. Microwave at half power for 3 to 4 minutes per side at a time turning over and continuing to cook until the fish is opaque throughout.
